Back Ribs

While slightly shorter in length than spareribs, baby back ribs definitely aren’t short on tenderness. This crowd-pleaser is also lean and bursting with delicious flavor.

Spareribs

Versatile and easy to cook, spareribs are one of the most popular types of ribs. They come from near the belly and are extra meaty. And because they’re often well-marbled, they’re also extra flavorful.

St.Louis Style Ribs

Trim up spareribs to a more uniform size and shape, and you have St. Louis style spareribs. Cook them up like a pitmaster pro – and see for yourself why they’re the most popular ribs for BBQ contests.

TANGY GRILLED BACK RIBS

Simply grilled slow and low, with a flavorful kick of sauce the last 15 minutes of grilling. Serve with backyard favorites of Peppery Potato Salad, deviled eggs, Cucumber and Red Pepper Salad and icy watermelon.

INGREDIENTS

  • 4 pounds pork back ribs
  • 1 cup french dressing (reduced-fat)
  • 2 tablespoons onion soup mix
  • 2 tablespoons honey
  • 1 tablespoon soy sauce (reduced-sodium)

DIRECTIONS

1. Season ribs with salt and pepper. Grill ribs over indirect medium heat for 1 1/2 – 2 hours until tender.

2. Combine dressing, soup mix, honey and soy sauce in a small bowl and mix well. Let stand 15 minutes or until needed.

3. Brush ribs with sauce during the last 15-30 minutes of cooking. Serve remaining sauce with ribs.

CHERRY COLA PORK RIBS

INGREDIENTS

  • 2 spare ribs (slabs St. Louis, 2 1/2 pounds each)
  • 4 teaspoons chili powder
  • 2 teaspoons garlic salt
  • 1/2 teaspoons chipotle chile (ground, divided)
  • 1/4 cup cherry cola (not diet)
  • 3/4 cup barbecue sauce (hickory-flavored)

DIRECTIONS

1.Prepare a grill to medium heat (350 degrees F.).

2.Starting at the bony underside of the rack, slip a small thin knife under the membrane on the bones. Loosen about 1 inch of the membrane. Grab the loosened membrane with a paper towel and pull along the length of the rack to remove the membrane. (You may have to do this a couple of times until most of the membrane is removed.) If needed for space on the grill, cut each slab in half between two ribs.

3. In a small bowl, mix chili powder, garlic salt and 1 teaspoon of chipotle. While grill is heating, rub mixture all over ribs and let stand for 15 to 30 minutes.

4.Pour 1/4 cup of cola into a bowl. Place ribs bone-side-down on grill* over indirect heat. Cover and cook for 1 1/2 to 1 3/4 hours, brushing ribs with cola on both sides about every 20 minutes, until rib bones shrink to expose bones by about a 1/2 inch at ends.

5. Meanwhile, in a small saucepan, combine barbecue sauce with remaining 1/3 cup cola. On the stove, simmer over medium-low heat, 10 to 15 minutes, stirring occasionally, until reduced to 3/4 cup. Stir in remaining 1/2 teaspoon chipotle.

6. Brush ribs with sauce and continue to cook 20 to 30 minutes, basting and turning often, until ribs are nicely glazed and tender. Let stand for 5 minutes on cutting board. Cut between bones and serve.

7. 8 servings (4 ribs per person)

8. *If using a charcoal grill, place over drip pan with 1/2 cup water.

SIMPLE SPARERIBS

INGREDIENTS

  • 2 pork spareribs (slabs, about 6 pounds total)
  • 2 tablespoons vegetable oil
  • kosher salt
  • pepper
  • barbecue sauce (optional)

DIRECTIONS

1. Prepare fire for indirect-heat cooking in a covered grill. Rub ribs with vegetable oil and season both sides with salt and pepper. Place ribs, not overlapping, over indirect heat on grill. Close grill hood and cook ribs for 1 1/2 to 2 hours, until ribs are very tender.

2. In final minutes of grilling, baste ribs with barbecue sauce, if desired. Cut and serve ribs with remaining sauce on the side.

3. Serves 6.
